Make sure there is enough water to completely cover the chicken, if not add more to cover. Add onion, celery, bay leaf, salt and pepper. Bring to a boil and then reduce heat to medium-high&amp;nbsp;and cook until chicken is tender. Remove chicken, onion, celery and bay leaf form broth. Skim any fat from the top of the broth. Discard onion, celery and bay leaf. Let chicken cool and then&amp;nbsp;remove skin and debone, cut into bite size pieces. Set aside. Prepare dumplings.&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;/DIV&gt;

&lt;P class=MsoNormal&gt;&lt;FONT face=Georgia size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;1 tsp salt&lt;BR&gt;&lt;BR&gt;1 egg, slightly beaten&lt;BR&gt;&lt;/SPAN&gt;&lt;/FONT&gt;&lt;FONT size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;&lt;FONT face=Georgia&gt;&lt;BR&gt;1 cup water or chicken broth (cooled)&lt;/FONT&gt;&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;/DIV&gt;
&lt;DIV&gt;
&lt;P class=MsoNormal&gt;&lt;FONT face=Georgia size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;Mix flour, salt together. Add egg and water or chicken broth. Mix and knead together to form a dough. Dough should not be sticky. Add additional flour if needed. Flour a dough board generously to prevent the dough from sticking. Add more flour as needed. Roll the dough very thin. With a knife (or a pizza wheel works great) cut dough into strips 1 inch wide and 3 inches long. Keep dumplings floured well, the extra flour helps thicken the chicken broth.&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;/DIV&gt;
&lt;DIV&gt;
&lt;P class=MsoNormal&gt;&lt;FONT face=Georgia&gt;&lt;FONT size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;Add butter to broth and bring to a boil. Slowly drop dumplings into the&amp;nbsp;broth.&amp;nbsp;Only a couple at a time to keep them separated and to keep them&amp;nbsp;from sticking together. Turn heat back to&amp;nbsp;medium and&amp;nbsp;let dumplings cook for 15 minutes. Add chicken meat and cook additional 10 to 15 minutes. The longer you cook them the thicker it gets.&lt;BR&gt;&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/FONT&gt;&lt;FONT face=Georgia&gt;&lt;FONT size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;&lt;BR&gt;Enjoy!&lt;BR&gt;&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/FONT&gt;&lt;FONT face=Georgia size=3&gt;&lt;SPAN style="FONT-SIZE: 12pt"&gt;~&amp;nbsp;&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;/DIV&gt;

She was a precious and incredible young lady.&amp;nbsp;Her family will be our special guest at the Christmas Eve Breakfast.&amp;nbsp;&amp;nbsp;Her mother, Tresa Whitehead, is now&amp;nbsp;a member of the National Meningitis Association's MOMs on Meningitis program. &lt;DIV&gt;(Jackson, TN)&amp;nbsp;&amp;nbsp; Four members of the Shaw Family who operate Brooks Shaw &amp;amp; Son Old Country Store in Casey Jones Village recently attended the 2009 Southern Foodways Alliance Symposium.&amp;nbsp; Deborah Shaw Laman, and her Mother, Anne Shaw, attended the 2009 Delta Divertissement held in Greenwood, Mississippi.&amp;nbsp; It began with a "Boarding House Lunch" at the Viking Range Training Center in downtown Greenwood with Viking chef Elizabeth Heiskell.&amp;nbsp; The evening event was a trip to Indianola, Mississippi to visit the multi-million dollar B.B. King Museum &amp;amp; Delta Interpretative Center followed by dinner at Club Ebony, now owned by B.B. King.&amp;nbsp;Accommodations were at the world renowned Alluvian Hotel in downtown Greenwood.&lt;/DIV&gt;
&lt;DIV&gt;&amp;nbsp;&lt;/DIV&gt;
&lt;DIV&gt;Clark and Juanita Shaw attended the Symposium in Oxford, Mississippi which was entitled "Music &amp;amp; Food: Exploring Interdependent Cultural Expressions".&amp;nbsp; The weekend long event entailed a fascinating schedule of various speakers, food events and networking with the conference attendees.&amp;nbsp; The Southern Foodways Alliance is a member supported non-profit organization dedicated to the documentation and preservation of the diverse food cultures of the American South.&amp;nbsp; It is under the directorship of John T. Edge, one of the country's most noted food experts and authors.&amp;nbsp; The SFA is headquartered at the Center for the Study of Southern Culture at the University of Mississippi at Oxford.&lt;/DIV&gt;

&lt;DIV&gt;&lt;STRONG&gt;"Greens" &lt;/STRONG&gt;cooking instructions by Juanita Shaw&lt;BR&gt;&lt;BR&gt;4 cups water&lt;BR&gt;1 country &lt;SPAN id=lw_1256961263_2 class=yshortcuts&gt;ham hock&lt;/SPAN&gt;&lt;BR&gt;2 to 2 &amp;#189; pounds of greens&lt;BR&gt;&lt;SPAN id=lw_1256961263_3 class=yshortcuts&gt;salt and pepper&lt;/SPAN&gt; to taste&lt;BR&gt;&lt;BR&gt;Put water in heavy stock pot. Bring to a boil, add ham hock and continue to boil for&amp;nbsp;15 to &lt;SPAN id=lw_1256961263_4 class=yshortcuts&gt;20&amp;nbsp;minutes&lt;/SPAN&gt; covered. To prepare greens for cooking, fill sink full of cold water, place greens in water. Remove the stems and as you do transfer the greens to other side of the sink. If the leaf is large tear in halves or thirds. When all the stems are removed, drain first rinse water and refill sink with &lt;SPAN id=lw_1256961263_5 class=yshortcuts&gt;fresh water&lt;/SPAN&gt; and rewash greens. Add prepared greens in batches to boiling ham hock water. As greens cook down, continue to add all greens. Reduce heat to low and cook uncovered for 1 &amp;#189; hours. Drain. Remove tips and stems. Cut into &amp;#189; inch slices. Mix dry ingredients together in a bowl. Add eggs, sugar, vanilla and nutmeg. Coat bottom of casserole dish with butter. Pour mixture into dish and bake at 350° for 20 minutes until top is brown. Reduce heat to 200° and cook another 40 minutes. Serve with your favorite sauce.&lt;/FONT&gt;&lt;/P&gt;

So it is with the acquisition, move and restoration of the Wellwood Country Store now open and located next to Brooks Shaw's Old Country Store in Casey Jones Village.&amp;nbsp; Founder Brooks Shaw worked at the historic 1925 building as a teenager and it inspired his love for country stores and Southern antiques.&amp;nbsp; It led to a collection of over 15,000 antiques on display since 1965 at Brooks Shaw's Old Country Store in Jackson today one of Tennessee's legendary attractions. &lt;BR&gt;&lt;BR&gt;The Wellwood store was moved in March to Casey Jones Village literally on the back of a large truck.&amp;nbsp; In the past six months it has undergone an extensive renovation and now is connected to the Old Country Store accessible by a breezeway in the gift shoppe. &lt;BR&gt;&lt;BR&gt;A ribbon cutting and reception is planned for Friday, October 9th at 11 am.&amp;nbsp; The public is invited and the Wellwood community is encouraged to bring and share any mementos they have of visiting the store when it was in&lt;BR&gt;operation.&amp;nbsp;&amp;nbsp;&amp;nbsp; &lt;BR&gt;&lt;BR&gt;The Store has important family ties for the Shaw family. Clark Shaw, 55, son of Old Country Store founder Brooks Shaw, and now company CEO said, "It's a dream come true to bring the store where my Dad worked as a boy to sit next to the Old Country Store it inspired.&amp;nbsp; It really completes the story of the very store that led to his journey to collect antiques in the early 1960's. His doctor told him for health reasons to find a relaxing hobby ~ antiquing as it turned out ~ that led to the Old Country Store we know and love today. Now they are side by side."&lt;BR&gt;&lt;BR&gt;Shaw continued, "For 15 to 20 years, it's been my dream to someday own the little store and relocate it to the Village as a tribute to our father, Brooks Clark Shaw. Our cousins, Joy Carr Moss and Linda Carr Czigan, stopped there for years as children on their school bus stop. They helped us lay out the store with their vivid memories of what it looked&amp;nbsp; like at that time."&amp;nbsp; &lt;BR&gt;&lt;BR&gt;The Wellwood Store is a classic rural Southern country store.&amp;nbsp; It is a white wood frame shotgun style building that is 52 feet long and 20 feet wide.&amp;nbsp; It has over 700 square feet of space created to look much like it did when Shaw worked there.&amp;nbsp; It is filled with hundreds of original antiques that are a part of the Shaw collection and authentic country store reproductions items as would have been found from the 1930's back to the 1880's. A portion of the building is the new studio of the world class artisan and master wood carver,&amp;nbsp; H. Dee Moss.&amp;nbsp; The building was decorated and set up by Nancy Jane Hall, Juanita Shaw's sister.&lt;BR&gt;&lt;BR&gt;The Old Country Store was founded in 1965 as an antique museum dedicated to Pop's Old Country Store and Mom's Home Cookin' by Brooks and Anne Shaw. Mr. Shaw passed away in 1971 at the age of 46 of heart disease. &lt;BR&gt;&lt;BR&gt;Shaw explained, "Our goal was to lay out the Wellwood Country Store as close as possible to where everything was at the time my Dad worked there including the checker board, pot bellied stove, candy case, soda box, dry goods and hoop cheese." He concluded, "Dad was fond of saying, "I worked for 50 cents a day and all the hoop cheese I could eat." It is also a tribute to the hardworking people of the Wellwood community where the store was a focal point of the rural West Tennessee community for many years. We are honored to restore and preserve the Wellwood Store for future generations to enjoy." &lt;BR&gt;&lt;BR&gt;Brooks Shaw's Old Country Store is located at 56 Casey Jones Lane in Jackson, Tennessee. The article about the Store was written by the talented&amp;nbsp;Paul Knipple and includes the&amp;nbsp;Old Country&amp;nbsp;Store history, about our restaurant and our local food initatives, the West Tennessee Culinary Map and an interview with Clark and Juanita Shaw who operate our business.&amp;nbsp; Clark is the&amp;nbsp;son of founder Brooks&amp;nbsp;C.
